HOLLOW MOON CAFÉ

This is Fred Ball for Zions Bank, speaking on business.

Nothing makes me happier than a delicious home-style meal! This is why I get so excited to try new restaurants. My latest find is in a tiny town called Myton in Duchesne County.

Raquel Hollingworth spent most of her life in the service industry. She also dabbled in catering. Not long ago she decided to try something new. She became acquainted with Camille Moon and partnered with the Moon family, long-time cattle ranchers in the area, to open the Hollow Moon Café in January.

The Hollow Moon Café provides American-style food including steaks, prime rib, pasta, chicken and gourmet burgers. By far, the most popular dish is the roast chicken alfredo, an interesting take on alfredo with herbs, spices, roast chicken strips, asparagus and fresh tomatoes on a penne pasta. Prime rib is also a top seller. To change things up a bit, Raquel and Camille wanted to offer something normally not found in the area, so the restaurant also sells gelato, which is made on site daily.

Recently, Hollow Moon Café opened its outdoor dining area. The 1,500-square-foot enclosed patio features tables with umbrellas, music, flowers and picturesque scenery for guests to enjoy. Raquel tells me the restaurant has been quite successful, even drawing customers from as far away as Vernal. She would love to not only grow the restaurant in its present location but also to expand into other areas including Vernal.

The Hollow Moon Café is known for its fresh-cooked fare and its commitment to service. Being located in a rural area is no reason to settle for mediocre service or products, Raquel says. With home-style dishes made from scratch every day, Camille says visiting the café is like taking a trip to grandma's house but with a twist.
